Il Paradiso di Frassina in Montalcino, better known as the Mozart’s Vineyard, is unique in the world of viticulture, not only in Italy but also in the world.
In this winery nestled among enchanting hills in the heart of the Val d’Orcia, the grapes grow to the rhythm of music! In fact, vine music therapy is practiced here, and exclusively with Mozart’s melodies.
The project has been followed by the Universities of Pisa and Florence for several years now and has a solid scientific basis. Music is good for wine by contributing to a higher quality of the wines produced and at the same time allowing not to use products that are harmful to the environment.
And this is how the fabulous wines of Il Paradiso di Frassina are born, which even during their aging in wood and their refinement in the bottle, enjoy the benefits of the classic melodies of the great Viennese composer.
We therefore present our wines while also revealing some little secrets that accompany their production.
GEA Rosso di Montalcino DOC
Gea is our youngest wine, dedicated to Carlo Cignozzi’s youngest daughter, Gea.
It is a Rosso di Montalcino, therefore 100% Sangiovese, which is aged in 500-liter French oak tonneaux.
In this case, the tonneaux are not new, it means that they are tonneaux that have a second or third year of life, so the wine has already been there. This is important in order not to give too many hints of wood and too much charge to a wine that stays in these containers for a year and then is bottled.
Our aim is to create a wine that is not trivial, a wine with its consistency and good persistence without being demanding, a wine to open the bottle and drink. A wine, as Americans say, to drink every day, to be drunk also as an aperitif.
Gea is a wine that can be drunk in a simple way, but it also goes very well with appetizers and first courses.
A pleasant wine to drink, which gives you sensations of fresh fruit, floral, which can also age but in that case it would lose its freshness and its youth.
MOZ ART WINE Brunello di Montalcino DOCG
Our Brunello wine comes from a careful selection of our best grapes at Il Paradiso di Frassina.
The vinification process is different from that of the Rosso di Montalcino; the grapes destined for making Brunello wine remain in the fermentation tank for 30/35 days.
The grapes remain here to macerate, in contact with the skins, in order to release all the polyphenolic compounds and to give structure and complexity to the wine.
Then the wine is placed in French oak tonneaux for a year, half of which are new, and then it is transferred to French oak barrels but larger, 20/25 hectoliters, in order to refine and age but in a calmer way, without the excessive contribution of wood. This makes the wine very elegant and very smooth.
Finally, it is bottled for a year before being released on the market.
It is a wine that we take particular care of in fact we gave it the name of Moz Art Wine, precisely to remember the great composer who is played in the vineyards all year round.
The perfect match for Brunello wine is meat, especially a juicy steak.
12 Uve Maremma Toscana DOC
Our 12 Uve wine is the one created by the imagination of Carlo Cignozzi in our vineyard in Maremma.
Since we don’t have music boxes in the Maremma vineyard, then Carlo has the idea of creating a musical wine here too; 12 are the grapes as well as 12 are the notes of the musical scale, and thus one grape is associated with one note.
12 Uve is also the most interesting wine to make, 4 harvests are made, as the various grapes do not all ripen in the same period, so the harvest is long, starting from mid-August to mid-September.
During this period, 4 groups of grapes are harvested separately, each with 3 types of grapes. Then we harvest those 3 that from time to time have a similar maturation.
These groups of grapes remain separate even during fermentation, so we will have 4 steel tanks each with 3 grapes inside. Then these groups of grapes are still kept separate even in the wood.
Only at the end of the 2 years of aging in wood we make the blend, that is the final mix that makes this wine incredibly unique!
12 Uve is never the same! it changes from year to year precisely because we cannot have the same percentages of grapes every time. It is a chameleonic wine, a wine that changes in the glass, and gives unique sensations even during a dinner, because it evolves even in the short time of a dinner.
The 12 grapes come out at different times, you can feel many variables, from herbaceous, to black fruit, to blueberries and spices.
12 Uve wine goes very well with game, and with spicy foods.
It is also very popular in Asian countries precisely because it is a little more spicy.
